Cooking Instructions
- 1
Prepare the Tenderloin
Trim any excess fat from the beef tenderloin. Cut the tenderloin into 2-inch thick medallions.
- 2
Season the Meat
In a small bowl, mix salt, black pepper, and garlic powder. Rub this seasoning mixture all over the tenderloin medallions.
- 3
Wrap with Bacon
Take a slice of bacon and wrap it around each tenderloin medallion, securing it with a toothpick if necessary.
- 4
Sear the Wrapped Medallions
In a large skillet, heat olive oil over medium-high heat. Once hot, add the bacon-wrapped tenderloin medallions and sear for about 3-4 minutes on each side until the bacon is crispy.
- 5
Add Fresh Herbs
Sprinkle fresh rosemary over the medallions while they cook for added flavor.
- 6
Finish Cooking
Transfer the skillet to a preheated oven at 400°F (200°C) and roast for an additional 10-15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- 7
Rest and Serve
Remove the medallions from the oven, let them rest for 5 minutes before serving. Serve hot.
