Prepare the Fish
In a mixing bowl, combine flour, cornstarch, baking powder, salt, black pepper, and cold water to create a batter. Dip each cod fillet into the batter, ensuring it is well coated.

Fry the Fish
Heat vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the battered cod fillets. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Make the Coleslaw
In a large bowl, mix shredded cabbage and grated carrots. Drizzle lime juice over the mixture and toss to combine. Season with salt and pepper to taste.

Prepare Jack's Sauce
In a small bowl, combine mayonnaise, hot sauce, garlic powder, and onion powder. Mix well to create Jack's Sauce.

Assemble the Tacos
Warm soft corn tortillas in a skillet or microwave. Place a piece of fried cod on each tortilla, top with coleslaw, pico de gallo, and a drizzle of Jack's Sauce. Fold the tortillas and serve immediately.
