    Prepare the Mac and Cheese

    Cook the macaroni according to package instructions. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan over medium heat, melt butter. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk and cook until thickened. Add Cheddar and Monterey Jack cheeses, stirring until melted and smooth. Season with salt, pepper, garlic powder, and paprika.

    Combine Mac and Cheese

    Mix the cooked macaroni with the cheese sauce until well combined. Allow to cool, then refrigerate for at least 1 hour until firm.

    Form the Balls

    Once the mac and cheese is firm, scoop out portions and roll them into balls (about 1.5 inches in diameter).

    Prepare for Frying

    Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls. Dip each mac and cheese ball first in flour, then in egg, and finally coat with breadcrumbs.

    Fry the Mac'N'Jack

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the mac and cheese balls in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.
