    In a pot, heat the chicken or seafood broth on medium-low heat. Keep it warm but not boiling as you will need it to gradually add to the risotto.

    In a large saucepan, heat the olive oil and 2 tablespoons of butter over medium heat. Add the shallots and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Toast the Rice

    Add the Arborio rice to the saucepan with the sautéed shallots and garlic. Stir well to coat the rice with the oil and butter. Toast the rice for about 2 minutes until slightly translucent around the edges.

    Deglaze with Wine

    Pour in the dry white wine and stir continuously until the wine is mostly absorbed by the rice.

    Add the Broth Gradually

    Begin adding the warm broth, one ladleful (about 1 cup) at a time, to the rice. Stir frequently and wait until the liquid is mostly absorbed before adding the next ladleful. Continue this process for about 18-20 minutes until the rice is creamy and al dente.

    Incorporate Lobster and Cheese

    Once the rice is cooked to your liking, gently fold in the chopped lobster meat, 1 cup of grated Parmesan cheese, the remaining 2 tablespoons of butter, salt, and black pepper. Stir until everything is well combined and heated through.

    Serve the risotto hot, garnished with freshly chopped parsley and additional Parmesan cheese if desired.
