Cook the Pasta

In a large pot of salted boiling water, cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside.

Brown the Sausage

In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

Add Garlic and Spices

Add minced garlic and crushed red pepper flakes to the skillet with the sausage. Sauté for about 1-2 minutes until fragrant.

Deglaze with Vodka

Pour in the vodka and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Let it cook for about 2-3 minutes to reduce slightly.

Stir in Cream

Reduce the heat to low and stir in the heavy cream. Allow it to simmer for another 2-3 minutes until the sauce thickens slightly.

Add Cheese and Season

Stir in the grated Parmesan cheese until melted and well combined. Season with salt and black pepper to taste.

Combine Pasta and Sauce

Add the cooked penne pasta to the skillet and toss until the pasta is fully coated in the sauce.

Remove from heat and stir in the chopped fresh basil. Adjust seasoning if necessary.
