Preparing the Calamari

    Clean the Calamari

    Start by cleaning the fresh calamari. Remove the head and innards, and peel off the outer skin. Rinse thoroughly under cold water and pat dry with paper towels.

    Cut the Calamari

    Slice the calamari bodies into rings about 1/2 inch thick. If using calamari tentacles, leave them whole.

    Marinate

    Place the cleaned and cut calamari in a bowl and pour in the buttermilk. Let it marinate in the refrigerator for at least 30 minutes.

Breading and Frying

    Prepare the Breading Mixture

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Calamari

    Remove the calamari from the buttermilk, letting the excess drip off. Dredge each piece in the flour mixture until well-coated.
