1. Prepare the Potatoes

Peel the russet potatoes and cut them into evenly sized sticks, about 1/4 inch thick. Soak the potato sticks in cold water for at least 30 minutes to remove excess starch.

2. Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

3. Heat the Oil

In a deep fryer or a large, heavy pot, heat the vegetable oil to 325°F (160°C). Use a thermometer to ensure the oil is at the right temperature.

4. Fry the Potatoes

Working in batches, fry the potato sticks in the hot oil for about 5-7 minutes until they are pale and soft. Remove them with a slotted spoon and drain on paper towels.

5. Increase Oil Temperature

Increase the oil temperature to 375°F (190°C).

6. Second Fry

Return the softened fries to the hot oil in batches and fry for an additional 2-3 minutes until they are golden brown and crispy. Drain again on paper towels.

7. Season and Serve

Sprinkle the fried potatoes with salt to taste while they are still hot. Serve immediately with your choice of dipping sauce.
