Marinate the Chicken
In a large bowl, combine the chicken pieces with onion, garlic, ginger, thyme, scotch bonnet pepper, soy sauce, brown sugar, black pepper, and salt. Mix well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 2 hours or overnight for best results.

Brown the Chicken
Heat the vegetable oil in a large pot over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and brown the pieces in batches until golden brown on all sides. Remove and set aside.

Simmer
Reduce the heat to low, cover, and let simmer for about 45 minutes to 1 hour, or until the chicken is tender and fully cooked. Stir occasionally and adjust seasoning if needed.

Serve the brown stew chicken hot with white rice, sweet plantain, and your choice of steamed veggies or pickled salad.
