Marinating Goat Meat

Marinate the Goat
In a large bowl, combine goat meat with garlic, thyme, scotch bonnet pepper, lime juice, salt, black pepper, and oregano. Mix well, cover, and let marinate for at least 2 hours or overnight in the refrigerator.
Cooking Rice and Peas

Prepare Rice and Peas
In a pot, combine rice, red kidney beans, coconut milk, green onion, thyme, and salt. Add 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.
Frying Goat Meat

Fry the Goat
Heat vegetable oil in a large skillet over medium-high heat. Remove goat meat from marinade and fry in batches until browned and cooked through, about 10-15 minutes per batch. Drain on paper towels.
Preparing Fried Plantains

Fry Plantains
Peel and slice green plantains. Heat oil in a separate pan and fry plantain slices until golden brown, about 3-4 minutes per side. Drain on paper towels.
