Marinate the Chicken
In a bowl, combine the chicken thighs with jerk seasoning, salt, and pepper. Ensure the chicken is well coated. Cover and marinate for at least 1 hour, preferably overnight.

Prepare the Island Aioli
In a small bowl, mix mayonnaise with lime juice and a pinch of salt. Adjust seasoning to taste.

Fry the Plantains
Slice the sweet plantains diagonally. Heat a little oil in a skillet over medium heat, and fry the plantain slices until golden brown on both sides. Drain on paper towels.

Assemble the Burrito
Warm the flour tortillas. On each tortilla, layer sliced jerk chicken, shredded purple cabbage, cooked rice, cooked peas, and fried plantains. Drizzle with island aioli.

Wrap and Serve
Fold in the sides of the tortilla and roll it up tightly. Cut in half and serve immediately.
