Prepare the Jerk Chicken
Cook the jerk chicken according to your preferred method (grilling, baking, or frying). Once cooked, cut into chunks and set aside.

Sauté the Vegetables
In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the mixed vegetables and cook for about 3-5 minutes until tender.

Fry the Rice
Add the cooked rice to the skillet with the sautéed vegetables. Pour in the soy sauce and stir well to combine. Cook for an additional 5 minutes, allowing the rice to fry slightly.

Combine and Serve
Add the jerk chicken chunks and chopped green onions to the rice mixture. Stir to combine and cook for another 2-3 minutes. Season with salt and pepper to taste. Serve hot.
