    Prepare the Tofu

    Press the tofu to remove excess moisture, then cut it into cubes. Marinate the tofu with jerk seasoning for at least 30 minutes.

    Cook the Rice and Peas

    In a pot, combine brown rice, coconut milk, green peas, salt, and water (2 cups). Bring to a boil, then reduce heat, cover, and simmer for about 45 minutes or until the rice is cooked and liquid is absorbed.

    Fry the Plantains

    Peel and slice the plantains diagonally. Heat olive oil in a pan over medium heat and fry the plantain slices until golden brown on both sides. Set aside.

    Cook the Tofu

    In the same pan used for the plantains, add more olive oil if needed, and sauté the marinated tofu cubes until golden and crispy on all sides.

    Serve

    Serve the jerk tofu with rice and peas, fried plantains, and your choice of steamed veggies or a pickled cucumber, carrot, and red onion salad.
