    Prepare the Fish

    Clean the red snapper and season it with salt, black pepper, garlic, ginger, scotch bonnet pepper, thyme, and green onions. Let it marinate for at least 30 minutes.

    Sauté the Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add chopped onion, bell pepper, and tomatoes. Sauté until soft.

    Cook the Fish

    Gently add the marinated snapper to the pot. Pour in the water and bring to a simmer. Cover and cook on low heat for 30-40 minutes until the fish is cooked through and tender.

    Prepare Rice and Peas

    In another pot, cook 1 cup of rice with 1 can of coconut milk and 1 cup of water. Add 1 can of kidney beans, salt, and thyme. Cook until rice is tender.

    Fry Plantains

    Slice sweet plantains and fry them in a pan with vegetable oil until golden brown on both sides.

    Serve the brown stew snapper with rice and peas, fried plantains, and your choice of steamed veggies or pickled cucumber, carrot, and red onion salad.
