Prepare the Marinade
In a large bowl, combine goat meat, curry powder, garlic, ginger, onion, salt, black pepper, thyme, and Scotch bonnet pepper. Mix well and let marinate for at least 1 hour, preferably overnight.

Brown the Goat
In a large pot, heat vegetable oil over medium-high heat. Add the marinated goat meat and brown on all sides.

Cook the Goat
Add water, bay leaves, and coconut milk to the pot. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the meat is tender.

Cook the Rice
While the goat is cooking, prepare the rice according to package instructions. For rice and peas, add kidney beans and coconut milk to the rice while cooking.

Fry the Plantains
Peel and slice sweet plantains diagonally. In a frying pan, heat vegetable oil over medium heat and fry the plantain slices until golden brown on both sides. Drain on paper towels.

Serve
Serve the curry goat over a bed of rice or rice and peas, alongside sweet plantains, steamed veggies or your choice of pickled salad.
