Prepare the Oxtail
In a large pot, season the oxtail with salt, black pepper, cumin, garlic powder, and onion powder. Add enough water to cover the oxtail completely. Bring to a boil, then reduce heat and simmer for about 2-3 hours until the meat is tender and falling off the bone.

Make the Slaw
In a large bowl, combine the purple cabbage, shredded carrots, chopped cilantro, lime juice, olive oil, and a pinch of salt. Toss everything together until well mixed. Set aside to let the flavors meld.

Assemble the Tacos
Once the oxtail is cooked, remove it from the pot and shred the meat using two forks, discarding any bones. Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable. Fill each tortilla with shredded oxtail and top with the purple cabbage slaw.

Serve the tacos warm, garnished with extra cilantro and lime wedges on the side if desired.
