    Marinate the Pork

    In a large bowl, combine the pork cubes, minced garlic, dried thyme, minced Scotch bonnet pepper, lime juice, black pepper, and salt. Mix well to ensure the pork is evenly coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Fry the Pork

    Heat the vegetable oil in a deep frying pan or pot over medium-high heat. Once the oil is hot, carefully add the marinated pork cubes in batches, avoiding overcrowding. Fry until golden brown and cooked through, about 6-8 minutes per batch. Remove the pork with a slotted spoon and drain on paper towels.

    Prepare the Sides

    Cook white rice and black beans according to package instructions. For fried plantains, peel and slice green plantains, then fry in a separate pan until golden and crispy. For the salad, combine pickled cucumbers, carrots, and red onions (or steamed veggies) in a bowl.

    Serve

    Serve the fried pork alongside white rice, black beans, fried plantains, and the salad or steamed veggies. Enjoy your Bang Bang!
