Method

Preparation of Budino

Step 1: Combine Ingredients

In a saucepan, whisk together the milk, heavy cream, sugar, cocoa powder, and salt over medium heat until combined and warm, but not boiling.

Step 2: Mix Egg Yolks

In a separate bowl, whisk together the cornstarch and egg yolks until smooth.

Step 3: Temper the Egg Yolks

Slowly pour a ladle of the warm chocolate mixture into the egg yolk mixture while whisking constantly to temper the yolks. Then gradually add the tempered yolk mixture back into the saucepan.

Step 4: Cook the Mixture

Continue to cook the mixture over medium heat, whisking constantly, until it thickens, about 5-7 minutes.

Step 5: Add Flavor

Remove from heat and stir in the vanilla extract. Let it cool slightly.

Step 6: Pour into Cups

Pour the budino into serving cups and refrigerate for at least 4 hours or until set.
