Dough and Filling

Method

Preparation and Assembly

  1. 1

    Make the Dough

In a mixing bowl, beat the unsalted butter and granulated sugar until light and fluffy. Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.

  2. 2

    Combine Dry Ingredients

In a separate bowl, sift together the all-purpose flour and cornstarch. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.

  3. 3

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

  4. 4

    Preheat Oven

Preheat your oven to 350°F (175°C).

  5. 5

    Shape the Cookies

On a floured surface, roll out the dough to about 1/4 inch thick. Use a round cutter to cut out cookies and place them on a baking sheet lined with parchment paper.

  6. 6

    Bake

Bake the cookies in the preheated oven for 10-12 minutes or until just lightly golden. Remove from the oven and let them cool completely.

  7. 7

    Assemble the Alfajores

Spread a generous layer of dulce de leche on the bottom of one cookie and top it with another cookie to create a sandwich. Roll the edges in powdered sugar if desired.

  8. 8

    Serve

Enjoy your homemade alfajores with a cup of coffee or tea!
