1. Prepare the Ingredients

Peel and cube the potatoes. Rinse the spinach leaves thoroughly and chop them coarsely. Finely chop the onion, garlic, and ginger.

2. Cook the Potatoes

In a pot, heat oil over medium heat. Add cumin seeds and let them sizzle. Add the chopped onions and sauté until golden brown.

3. Add Garlic and Ginger

Add the minced garlic and grated ginger to the pot and sauté for another minute until fragrant.

4. Add Potatoes and Spices

Stir in the cubed potatoes, turmeric powder, and salt. Mix well and cook for 5 minutes.

5. Cook Spinach

Add the chopped spinach and water to the pot. Stir to combine and cover. Let it simmer for about 15-20 minutes or until the potatoes are tender.

6. Blend the Mixture

Once cooked, use a blender or immersion blender to puree the mixture until smooth. Adjust seasoning as needed.

7. Serve

Serve hot with rice or flatbread.
