1. Prepare the Ingredients
Peel and cube the potatoes. Rinse the spinach leaves thoroughly and chop them coarsely. Finely chop the onion, garlic, and ginger.
2. Cook the Potatoes

Add the chopped spinach and water to the pot. Stir to combine and cover. Let it simmer for about 15-20 minutes or until the potatoes are tender.
6. Blend the Mixture
Once cooked, use a blender or immersion blender to puree the mixture until smooth. Adjust seasoning as needed.
7. Serve
Serve hot with rice or flatbread.
