    In a large pot, bring the bone broth to a simmer. Add soy sauce and mirin, stirring to combine. Let it simmer for about 20 minutes to enhance the flavors.

    In a separate pan, heat sesame oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the pan. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from heat and let it rest before slicing.

    In a pot of boiling water, cook the udon noodles according to package instructions (usually around 8-10 minutes). Drain and set aside.
