Cook the Udon Noodles

In a large pot, bring water to a boil and cook the udon noodles according to package instructions. Drain and set aside.

Prepare the Curry Broth

In a separate pot, heat a little oil over medium heat. Add curry powder and sauté for about 1 minute until fragrant. Slowly add the chicken or vegetable broth and coconut milk, stirring well.

Season the Broth

Add soy sauce, salt, and pepper to the broth. Let it simmer for about 10 minutes to allow the flavors to meld.

Assemble the Dish

To serve, place a portion of cooked udon noodles in a bowl, ladle the curry broth over the noodles, and top with soft-boiled eggs, pickled ginger, and sliced green onions.
