    Prepare the Lobster Broth

    In a large pot, bring 8 cups of water to a boil. Add the whole lobster and cook for about 10-12 minutes until it turns bright red. Remove the lobster and reserve the broth.

    Prepare the Lobster

    Once the lobster is cool enough to handle, remove the meat from the claws and tail. Cut the meat into bite-sized pieces and set aside.

    Butter-Poach the Lobster

    In a skillet, melt 4 tablespoons of butter over medium heat. Add the lobster meat and cook gently for about 2-3 minutes until heated through. Season with salt and pepper to taste.

    Cook the Udon Noodles

    In the reserved lobster broth, bring it back to a gentle simmer. Add the udon noodles and cook according to package instructions until tender, usually about 5-7 minutes.

    Prepare the Toppings

    In the last few minutes of cooking the noodles, add the beech mushrooms and menma to the broth to heat through.

    Assemble the Dish

    Divide the cooked udon noodles and broth among serving bowls. Top with butter-poached lobster pieces, soft boiled eggs (halved), and drizzle with chili oil. Serve hot.
