Prepare the Soft-Boiled Eggs

Bring a pot of water to a boil, gently add the eggs, and boil for 6-7 minutes. Remove and place them in an ice bath for 5 minutes, then peel and set aside.

Make the Miso Veggie Broth

In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant. Stir in miso paste and cook for another minute.

Add Broth and Seasonings

Pour in the vegetable broth and soy sauce. Bring to a gentle simmer, then season with salt and pepper to taste. Let it simmer for about 10 minutes.

Cook the Ramen Noodles

In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

Prepare the Tofu and Mushrooms

If not already roasted, roast the tofu until golden and crispy. Sauté the smoked trumpet mushrooms in a pan until heated through.

Assemble the Ramen Bowls

In serving bowls, place a portion of ramen noodles, ladle the miso broth over them, and top with roasted tofu, sautéed mushrooms, soft-boiled eggs, and chopped green onions.
