Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions. Once done, let it sit for 10 minutes.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until sugar dissolves. Pour this mixture over the cooked rice and fold gently to combine. Let the rice cool to room temperature.

Prepare the Filling
Slice the fresh salmon and avocado into thin strips.

Assemble the Roll
Lay a bamboo sushi mat on a flat surface. Place a nori sheet shiny side down on the mat. Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top edge.

Add the Fillings
Place the salmon and avocado strips in a line across the center of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to shape it. Roll until the top edge of the nori overlaps the filling. Wet the edge of the nori to seal the roll.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Top with Yellowtail
Arrange slices of fresh yellowtail on top of the sliced rolls. Serve immediately with soy sauce, wasabi, and pickled ginger.
