Preparation Instructions
Prepare the Tuna
Pat the fresh tuna steak dry with paper towels. Lightly season both sides with sea salt.
Crust the Tuna
Crush the black peppercorns using a mortar and pestle or a rolling pin. Press the crushed peppercorns evenly onto both sides of the tuna steak.
Sear the Tuna
Heat sesame oil in a skillet over medium-high heat. Once hot, sear the tuna for about 1-2 minutes on each side for rare, or longer if a more well-done texture is preferred. Remove from heat and let rest for a few minutes.
Make the Citrus Sauce
In a small bowl, whisk together soy sauce, lemon juice, lime juice, mirin, and grated ginger until well combined.
Slice and Serve
Using a sharp knife, slice the seared tuna into thin strips. Arrange the slices on a plate and drizzle with the citrus sauce. Garnish with sliced green onions and sesame seeds.
