Prepare the Beef

Slice the beef sirloin against the grain into thin strips, about 1/4 inch thick.

Marinate the Beef

In a bowl, mix together soy sauce, mirin, sugar, sesame oil, salt, and black pepper. Add the beef strips and marinate for at least 30 minutes.

Wrap the Scallions

Take a marinated beef strip, place a scallion on one end, and roll the beef around the scallion tightly. Secure with a toothpick or kitchen twine.

Cook the Negimaki

Heat vegetable oil in a skillet over medium-high heat. Place the wrapped beef rolls seam-side down in the skillet. Cook for about 3-4 minutes on each side until browned and cooked through.

Serve

Remove the toothpicks or twine and slice the negimaki into bite-sized pieces. Serve warm with extra soy sauce if desired.
