Sweet Potato Roll Directions

1. Prepare Sweet Potatoes

Peel and cube the sweet potatoes. Boil them in water until tender, about 15-20 minutes. Drain and mash until smooth. Let cool.

2. Make the Batter

In a large bowl, mix together flour, brown sugar, baking powder, salt, cinnamon, and nutmeg. In another bowl, whisk together the mashed sweet potatoes, eggs, vanilla extract, and melted butter until well combined. Pour the wet ingredients into the dry ingredients and mix until just combined.

3. Bake the Roll

Preheat the oven to 350°F (175°C). Spread the batter evenly into a greased jelly-roll pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

4. Prepare the Filling

While the roll is baking, beat together the cream cheese and powdered sugar in a medium bowl until smooth.

5. Assemble the Roll

Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes. Then, invert it onto a clean kitchen towel dusted with powdered sugar. Spread the cream cheese filling evenly over the surface of the cake. Carefully roll the cake up with the towel, starting from one end.

6. Chill and Serve

Wrap the rolled cake in plastic wrap and refrigerate for at least 2 hours. Once chilled, slice into pieces and serve.
