1. Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and mix with rice vinegar, sugar, and salt. Let it cool.
2. Prepare the Fillings
Peel and slice the avocado into thin strips. If not already done, prepare the tempura shrimp according to your preferred method (frying or pre-packaged). Slice the eel into thin pieces.
3. Assemble the Roll
Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands with water and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange the tempura shrimp, eel, and avocado in a line across the rice.
4. Roll the Sushi
Using the sushi mat, roll the nori away from you while applying gentle pressure to form a tight roll. Seal the edge of the nori with a bit of water.
5. Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
