    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then lower the heat and simmer covered for 15 minutes. Remove from heat and let sit for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.

    Prepare the Tofu

    Press the tofu to remove excess moisture, then cut it into thin strips. You can marinate the tofu in soy sauce for extra flavor if desired.

    Prepare the Vegetables

    Clean and slice the nameko and shiitake mushrooms. You can sauté the mushrooms in a little oil for added flavor or use them raw.

    Assemble the Sushi Rolls

    Lay a nori sheet on a bamboo sushi mat. Wet your hands to prevent sticking and spread an even layer of sushi rice over the nori, leaving a small margin at the top. Place strips of tofu, kaiware sprouts, and mushrooms in a line across the middle of the rice. Roll the sushi tightly, using the mat to help shape it. Seal the edge with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into bite-sized pieces. Serve with soy sauce and wasabi on the side.
