    Prepare the Ingredients

    Slice the chicken thighs into bite-sized pieces. Prepare the vegetables by chopping the napa cabbage, slicing the shiitake mushrooms, and cutting the green onions into thin slices.

    Make the Sauce

    In a bowl, mix together the soy sauce, mirin, and sugar until the sugar is dissolved.

    Cook the Chicken

    In a large skillet or pot, heat the vegetable oil over medium heat. Add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes.

    Add the Dashi and Sauce

    Pour in the dashi stock and the sauce mixture. Bring to a gentle simmer.

    Add Vegetables and Tofu

    Add the chopped napa cabbage, sliced shiitake mushrooms, cubed tofu, and shirataki or udon noodles to the pot. Simmer for another 5-10 minutes until the vegetables are tender.

    Garnish with sliced green onions and serve hot, either directly from the pot or in individual bowls.
