    Prepare the Shrimp

    Peel and devein the shrimp, leaving the tails on. Pat them dry with paper towels.

    Make the Batter

    In a large bowl, whisk together the flour, cornstarch, baking powder, and a pinch of salt. Gradually add the ice water and whisk until just combined. Do not overmix; the batter should be lumpy.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Shrimp

    Dip each shrimp into the batter, allowing the excess to drip off. Carefully place the battered shrimp in the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes until golden brown and crispy.

    Drain and Serve

    Remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with soy sauce, grated daikon radish, and lemon wedges on the side.
