Prepare the Teriyaki Sauce
In a small saucepan, combine the soy sauce, mirin, brown sugar, grated ginger, minced garlic, sesame oil, cornstarch, and water. Heat over medium heat until the sauce thickens slightly, stirring constantly. Remove from heat and set aside.

Cook the Seafood
In a large skillet or wok, heat a bit of oil over medium-high heat. Add the shrimp, scallops, and salmon pieces. Cook for about 5-7 minutes until the seafood is cooked through and opaque.

Combine and Serve
Pour the teriyaki sauce over the seafood and vegetables. Toss everything to coat evenly. Garnish with chopped green onions before serving.
