Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fluff the cooked rice with a fork and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Assemble the Sushi Rolls
Place a bamboo sushi mat on a flat surface and lay a nori sheet shiny side down. Wet your hands to prevent sticking, then spread a thin layer of sushi rice (about 1 cup) evenly over the nori, leaving a 1-inch border at the top. Arrange the salmon, cucumber, and avocado strips in a line across the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, tucking the filling in as you go. Roll tightly but not too tight to avoid squeezing out the filling. Seal the edge of the nori with a bit of water.

Slice and Serve
With a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
