    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the warm rice using a spatula. Allow the rice to cool to room temperature.

    Prepare the Roll

    Lay a bamboo sushi mat on a flat surface and place a nori sheet shiny side down on the mat. Wet your hands to prevent sticking and grab a handful of rice. Spread the rice evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Layer the tempura salmon, eel, cucumber, avocado, and tobiko along the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, roll the sushi away from you, applying gentle pressure to form a tight roll. Wet the top border of the nori with water to seal the roll.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Drizzle with spicy mayo and sprinkle sesame seeds on top if desired.
