Prepare the Ingredients
Start by chopping the vegetables into bite-sized pieces. Thinly slice the pork tenderloin into medallions.

Marinate the Pork
In a bowl, combine the sliced pork, soy sauce, garlic (minced), salt, black pepper, dried thyme, and red pepper flakes. Let it marinate for at least 15 minutes.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook for 2-3 minutes until softened. Then add the carrots, bell pepper, and zucchini, cooking for another 5-7 minutes until they are tender-crisp.

Push the vegetables to the side of the skillet and add the marinated pork. Cook for about 5-7 minutes, turning occasionally, until the pork is browned and cooked through.
