Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker instructions. Once cooked, let it sit covered for 10 minutes.

Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Heat in the microwave for about 30 seconds until the sugar dissolves. Fold this mixture into the cooked rice gently to season it.

Prepare the Fillings
Slice the cucumber into thin strips. Cut the smoked salmon into strips and set aside. Soften the cream cheese by leaving it at room temperature or microwaving it for a few seconds.

Assemble the Rolls
Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down, on the mat. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Place a few strips of smoked salmon, cream cheese, and cucumber in the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to form a tight roll. Use a sharp knife to slice the roll into 6-8 pieces.

Garnish and Serve
Sprinkle sesame seeds on top of the rolls for garnish. Serve with soy sauce and wasabi on the side.
