    Marinate the Chicken

    In a bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, salt, and black pepper. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.

    Prepare the Grill or Skillet

    Heat vegetable oil in a large skillet or hibachi grill over medium-high heat.

    Cook the Chicken

    Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken in the hot skillet or grill and cook for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove and let rest before slicing.

    Sauté the Vegetables

    In the same skillet, add the carrots, zucchini, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender but still crisp. Add chopped green onions in the last minute of cooking.

    Serve

    Slice the cooked chicken and serve it alongside the sautéed vegetables. Drizzle with additional soy sauce if desired.
