    Prepare the Filling

    In a large bowl, combine the shredded cabbage, shredded carrots, bean sprouts, chopped green onions, cubed tofu, soy sauce, sesame oil, chopped cilantro, salt, and pepper. Mix well and set aside.

    Soften Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it becomes pliable. Remove it from the water and lay it flat on a clean surface.

    Fill and Roll

    Place about 2 tablespoons of the filling mixture in the center of the rice paper wrapper. Fold the sides over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining wrappers and filling.

    Serve

    Arrange the haru maki on a serving platter. They can be served fresh with a dipping sauce of your choice, or you can fry them for a crispy texture.
