Make the Filling
In a large bowl, combine the ground chicken, ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Gyoza
Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges of the wrapper with water, fold it in half, and press to seal. Make pleats along the edge for a decorative touch, if desired. Repeat with remaining wrappers and filling.

Cook the Gyoza
Heat a large skillet over medium-high heat and add a bit of oil. Once hot, add the gyoza in a single layer and cook until the bottoms are golden brown, about 2-3 minutes. Carefully add 1/4 cup of water to the pan and cover immediately. Allow to steam for about 5-6 minutes, or until the water has evaporated and the gyoza are cooked through.

Serve
Remove the gyoza from the skillet and serve hot with soy sauce or your favorite dipping sauce.
