1. Prepare Sushi Rice

In a bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Mix gently and let it cool.

2. Prepare Nori

Place a sheet of nori on a bamboo sushi mat with the shiny side facing down.

3. Assemble the Roll

Spread a thin layer of sushi rice on the nori, leaving about 1 inch at the top. Arrange eel, cucumber, and avocado in a line across the middle of the rice.

4. Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a bit of water.

5. Cut the Roll

Using a sharp knife, slice the roll into 6-8 equal pieces. Wipe the knife with a damp cloth between cuts for clean slices.

6. Top with Masago

Place a small amount of masago on top of each sushi piece before serving.
