Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, transfer to a bowl and let it cool slightly.

Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for about 30 seconds until sugar dissolves. Pour this mixture over the warm sushi rice and fold gently to combine.

Assemble the Rolls
Place a bamboo sushi mat on a clean surface and lay a nori sheet shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top free of rice. Lay strips of avocado, cucumber, and crab meat across the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until the exposed edge of the nori sticks to the rice. Seal the roll with a bit of water.

Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top and serve with soy sauce and wasabi on the side.
