    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Let the rice cool to room temperature.

    Assemble the Roll

    Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands and take a handful of sushi rice, pressing it evenly over the nori, leaving about 1 inch at the top edge. Place cooked eel, cucumber, and avocado in a line along the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the nori away from you, tucking the filling inside. Roll tightly but not too tight to avoid squishing the ingredients. Dampen the edge of the nori with water to seal the roll.

    Slice the Roll

    Use a sharp knife to slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts for clean slices.

    Arrange the eel rolls on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
