Fried shrimp inside, topped with spicy crab

Heat the vegetable oil in a deep frying pan to 350°F (175°C). Dip each shrimp in the tempura batter and then gently place them into the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Shrimp

In a bowl, combine crab meat, mayonnaise, sriracha sauce, and green onions. Mix well and set aside.

Make the Spicy Crab Mixture

On a bamboo sushi mat, lay a sheet of nori. Spread about 1/2 cup of cooked sushi rice evenly on the nori. Place a few fried shrimp in a line across the rice, then add some of the spicy crab mixture on top of the shrimp. Roll tightly using the mat.

Assemble the Rolls

Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce on the side.
