    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and season with a little salt.

    Make the Tempura Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the ice water until the batter is smooth and well combined. The batter should be cold, so use ice water if possible.

    Heat the Oil

    In a deep pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and float to the surface.

    Fry the Chicken

    Dip each piece of chicken into the tempura batter, allowing excess batter to drip off. Carefully place the battered chicken into the hot oil. Fry in batches, making sure not to overcrowd the pan.

    Cook Until Golden

    Fry the chicken for about 4-5 minutes, or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
