    Prepare the Ingredients

    Start by preheating your oil in a deep pan or fryer. While the oil heats, prepare the chicken and fillings.

    Flatten the Chicken

    Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a mallet or rolling pin to gently pound the chicken until about 1/4 inch thick.

    Assemble the Negimaki

    Spread a tablespoon of mayonnaise on each flattened chicken breast. Place a few scallions, two asparagus spears, and a generous amount of crab meat on top. Roll the chicken tightly around the filling and secure with toothpicks if necessary.

    Prepare for Frying

    Set up a breading station with three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs.

    Bread the Chicken Rolls

    Dredge each chicken roll in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Ensure each roll is evenly coated.

    Fry the Negimaki

    Carefully place the breaded chicken rolls into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Slice the chicken negimaki into bite-sized pieces and serve hot with extra mayonnaise or a dipping sauce of your choice.
