    Marinate the Chicken

    In a bowl, combine soy sauce, sake, mirin, garlic, and ginger. Add the chicken thighs and mix well. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours.

    Prepare for Frying

    In a shallow dish, add cornstarch. Remove the marinated chicken from the fridge and coat each piece in cornstarch, shaking off any excess.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 175°C (350°F).

    Fry the Chicken

    Carefully add the coated chicken pieces to the hot oil in batches, avoiding overcrowding. Fry for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Serve

    Serve hot with lemon wedges and your choice of dipping sauce, such as mayonnaise or a soy-based sauce.
