California Roll Preparation

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes, then fluff with a fork.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.

Assemble the Rolls
Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, and take a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top edge. Place a line of imitation crab, avocado, and cucumber across the center of the rice.

Roll the Sushi
Using the sushi mat, carefully roll the sushi away from you, pressing gently but firmly. Wet the top edge of the nori with a little water to seal the roll.

Slice and Serve
Use a sharp knife to slice the roll into 6-8 pieces. Sprinkle sesame seeds on top and serve with soy sauce and wasabi.
