    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot. Bring to a boil, then reduce the heat to low, cover, and cook for 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

    Prepare the Avocado

    Cut the ripe avocados in half, remove the pit, and scoop the flesh out into a bowl. Mash the avocado lightly with a fork, adding a pinch of salt if desired.

    Assemble the Roll

    Lay a sheet of nori on a bamboo sushi mat. With wet hands, spread a layer of sushi rice over the nori, leaving about 1 inch at the top. Add a line of mashed avocado in the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the nori away from you, pressing gently to form a tight roll. Moisten the edge of the nori with water to seal the roll.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and serve with soy sauce, pickled ginger, and wasabi.
