Agedashi Tofu Ingredients

Method

Preparation Steps

  1. 1

    Prepare the Tofu

Drain the tofu and wrap it in a clean kitchen towel. Place a weight on top and let it sit for about 30 minutes to remove excess moisture.

  2. 2

    Cut and Coat the Tofu

Cut the pressed tofu into cubes or slabs. Dredge each piece in cornstarch until fully coated.

  3. 3

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

  4. 4

    Fry the Tofu

Carefully add the tofu to the hot oil in batches, frying until golden brown and crispy (about 3-4 minutes per side). Remove and drain on paper towels.

  5. 5

    Make the Sauce

In a small saucepan, combine dashi stock, soy sauce, and mirin. Bring to a simmer and remove from heat.

  6. 6

    Serve

Place the fried tofu in a serving dish. Pour the hot sauce over it and garnish with sliced green onions, grated daikon, and shredded nori.
