Prepare the Vegetables

Wash and chop all the vegetables as directed. Cut the broccoli into small florets, slice the bell pepper, julienne the carrot, and slice the mushrooms. Rinse the snap peas and chop the green onions.

Make the Sauce

In a small bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water. Mix until cornstarch is dissolved and the sauce is smooth.

Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.

Stir-Fry the Vegetables

Add the chopped broccoli, bell pepper, carrot, snap peas, and mushrooms to the skillet. Stir-fry for about 5-7 minutes, stirring frequently until the vegetables are tender-crisp.

Add the Sauce

Pour the prepared sauce over the stir-fried vegetables. Stir well to coat the vegetables evenly with the sauce. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Season and Serve

Season with salt and black pepper to taste. Remove from heat and garnish with chopped green onions before serving.
